The King's Week Game Restaurant

During the upcoming months, I will be returning to my old school, Kings Canterbury, to start the first-ever King's Week Game Restaurant which will be open to the public for the long weekend of the 26th to the 29th of June. I have started to teach the 11, 18 year olds how to cook game.

Over the course of the next couple of months, I am hoping that further to learning just the cooking, the students will also gain an understanding and hopefully some experience of hunting, game processing, butchery and the importance of local sourcing.

The restaurant will open during the school's arts festival, (King's Week). We will be putting the restaurant in to the school grounds by the Shirley hall, in a marquee. We will be serving a menu of local fish and game, where everything will be made from scratch by the students, under my supervision.

I think this will be a fantastic opportunity for the game industry to champion local ingredients and get the next generation interested in cooking with game.
