Mission

Working with game is both immensely rewarding and highly challenging. However, during my career as a caterer I hope to change people's perception of game and bring it to a new audience. Game and the countryside have been fundamentally mis-marketed and poorly branded for the last two generations.

Modern Game Cooking

I want to bring in what I call "modern game cooking," bringing the fantastic subtle flavour that all game birds have to offer. Modern game cooking is about getting perfectly hung, moist game birds served with combinations of interesting flavours. I want my cooking to reflect the passion I have for rural business and country issues. I want it to stand for change, I want the modern game cooking to inspire new customers to enjoy the best the countryside can produce and I hope to engage a new generation of game chefs.

I have developed my recipes and methods for modern game cooking, not from books written by researchers but from the experience I have developed by shooting, processing, hanging and cooking over 50,000 game birds.

Modern game cooking will champion game as food, demonstrating that it is under-utilised and highly sustainable. In fact I imagine that it is the only food source that has a zero carbon footprint at a time when food in Britain needs to take a good look at itself. It is a great time for game to step up and be counted.

The Future

In the next few years I hope to implement some of the ideas I have had in order to promote game. But for now I wish just to thank all the organisations and individuals that I have worked with to get me and my modern game cooking to this stage. I would also like to thank all those who would not take the time to listen to me, because it was you that made me focus on my goals and do so with even more passion. In fact following the summer of 2008, my resolve to bring about change in the game industry has never been stronger.
